The effect of gender and age
Certain types of fish contain high levels of mercury and polychlorinated biphenyls (PCBs). These pollutants are found in the San Francisco Bay, as well as other bodies of water, and may harm human health.
Follow the gender and age-specific guidelines issued by the California Office of Environmental Health Hazard Assessment (OEHHA) to determine personal acceptable exposure to these pollutants.
Best practices for preparing seafood
Fish skin, guts, livers, and fat contain about half of the PCBs found in a whole fish. Mercury may be present in fish organs as well. Remove these parts of the fish, cook sea food thoroughly, and drain juices to reduce exposure to harmful chemicals.
